Belizean Rum Punch
A classic creation from the Caribbean, Rum Punch is now served all over the world… though nobody makes it quite like Belize! Made from the lush sugar cane crops that grow so well in coastal regions, rum has become a widespread and iconic liquor in this part of the world. This distilled spirit mixes well in fruity cocktails and can even be enjoyed neat or on the rocks as it is known for having a high quality and smooth taste. Its sweet undertones of molasses that linger past each sip make this an alcohol that does not bite.
While this is one liquor every Caribbean visitor is encouraged to try, even more impressive is that Rum Punch has been declared the national cocktail of Belize! Found on nearly every menu and enjoyed by locals and travelers alike, there is truly no better way to greet island visitors. As such, this refreshing cocktail is the Welcome Home drink for all Las Terrazas Resort guests! Served on the dock upon arrival by our staff, including the fantastic Curl Bell (pictured above!), we can make our Rum Punch extra special with the addition of a paleta! Made from organic tropical fruits, these Spanish popsicles are delightful and full of flavor, giving our punch a special twist. Las Terrazas Resort is proud to partner with Regina Sansores from Las Paletas by Regina, as her handmade paletas are a local favorite on the island and provide a special addition to our already special cocktail. Her paletas boast of variety; her menu offers more than 15 flavors and includes both water and cream-based treats. When it comes to our Rum Punch, one thing is certain: this is one drink that leaves a lasting impression and has guests longing for more… and now you can enjoy it from the comfort of your own home.

Ingredients:
1 oz. Dark Rum (such as Travellers or One Barrel— both of which are distilled in Belize!)
1 oz. Coconut Rum
1 oz. Pineapple Juice
1 oz. Orange Juice
1/2 oz. Lime Juice
Dash of Grenadine or cherry syrup
Garnish with fruit
Pour over ice
The Monica Cocktail
This ‘Happy Shot’ was first dreamed up for a destination wedding by our beloved bartender, Monica. Tasked with creating a special drink for the groom and gentlemen of the wedding party, it was initially served as the Green Chable but has since been dubbed the Monica Cocktail, for obvious reasons. An impressive combination of hues and flavors, this is one drink that is sure to wow your guests!
Ingredients:
1 oz. Hyper Vodka
1/2 oz. Peach Schnapps
1/2 oz. Pineapple Juice
1/2 oz. Blue Curacao
Shake all ingredients over ice and strain through a Hawkes strainer
Pour into a large shot glass or small rock glass with ice
Garnish with fresh pineapple
Pineapple Mimosa
Otherwise known as the Mimosa 2.0! We’ve upgraded this popular cocktail with pineapple juice in lieu of the classic orange juice recipe with which most are acquainted. Spice up your next brunch with this simple, yet brilliant, twist!
Ingredients:
3 parts Sparkling Wine
1 part Fresh Pineapple Juice
Garnish with sliced pineapple and Maraschino cherries and let the bubbly do its job!
The Terrazas
A beautiful shade of blue with a perfect blend of tropical flavors, this signature drink was created with the Las Terrazas Resort logo in mind! This cocktail will perfectly satisfy the palette, all while giving you a craving for what Ambergris Caye does best: the beautiful Caribbean waters! Head to our pristine 70’ Infinity Pool with this drink in hand or order one as you lounge on the white sand beach, overlooking the aquamarine waters of the Caribbean Sea. Ingredients:
2 oz. Coconut Rum
1 oz. Blue Curacao
1 oz. Coconut Cream
1 oz. Pineapple Juice
1/2 oz Fresh Lime Juice
